Gelatinous: for aquatic or floating organisms.
Chromatophores: skin cells that can change color. Can either be a slight color change or dramatic( examples: chameleon, cuttlefish, some species of anole lizards).
Transparent skin: skin that can be partially transparent(example:glass catfish, daphnia,glass tree frog).
Shell: scales and/or part of the skeletal structure modified into a tough shell(examples: turtles and tortices, thorny devils, boxfish).
Extended membranes: for gliding or (obviously) flying(examples: sugar glider,flying lizards,bats).
change texture of skin: have the ability to produce protrubances on the skin for camouflage(examples: flamboyant cuttlefish, some species of frogs, tasseled wobegong shark)

Cool ideas! And that made me think: would it be possible to edit the thickness of the skin?

i have an idea. you could have thick leathery skin like a pachyderm, and yes i know that the pachyderm classification isn't really legitimate.
