This isn't something that's been touched on much, iirc.
The first conceptual depiction of coloring a cell in the Microbe Editor was in this animation, at 1:40. It showed a "decoration" tab providing some color-locked textures, as well as a paintbrush for secondary coloring.
Our second glimpse was in a different concept animation, which offered multiple base colors (well, colours) and a transparency slider, at 2:34:
As far as discussion goes, I only remember a few posts on the topic of coloration on the old forum. They were about what array of colors the player would have; my memory's far from perfect, but I'm pretty sure the idea was that available colors would be the sort one would see in actual microbes (so browns, blues, greens, etc.), as opposed to anything outlandish.
This wasn't the case with the first batch of preset microbes when coloring was first implemented, since they were pretty vibrant and diverse, while the most recent update (which phased out presets in favor of randomly-generated species) gave all cells the same white color as the player.
So, any ideas as for how things'll be when coloring is added for the first time? I'm assuming the only reasonable place for cosmetics is in the "Appearance" tab.

I would assume it could work like Spore's though maybe a color wheel would be better instead of the splotches that Spore had for more in-depth options.

The fact that all species are white in this release is because of a graphical glitch (the same that makes engulfment not paint the microbe blue or taking damage red like in previous versions of the game).
The npc microbes are supposed to have random colours.
